Slimming World Chocolate Truffles

is 24
3½ Syns per Truffle
ready in 15 minutes (plus 30 minutes chilling)
vegetarian

What you need.

125 ml low-fat single cream
250 g plain chocolate, finely chopped
2 levels of cocoa powder

What are you doing:

  1. Line a baking sheet or tray with baking paper.
  1. Place the cream in a non-stick saucepan over medium heat and bring to a boil, then remove from the heat. Stir the chocolate into the cream until it melts. Transfer to a bowl, let cool, then refrigerate for 30 minutes or until quite firm.
  1. Pour the cocoa powder on a small plate and rub the cocoa powder on your palms as well. Take 1 teaspoon of the chocolate mixture and roll with your hands into a 2cm ball, then roll in the cocoa powder and add to the lined baking tray. Repeat until you have used up the remaining mixture. Refrigerate the truffles until you are ready to serve them (they will keep for up to a week in the refrigerator).
  1. For a unique finish, roll each truffle in desiccated coconut or chopped pistachios (1 level teaspoon adds 1½ Syns to each truffle). For a lower Syn alternative, use 1 level teaspoon of freeze-dried raspberry pieces, adding ½ Syn per truffle.
