Guinness Braised Steak Recipe

What you need.
low calorie cooking spray
6 lean beef stew steaks, visible fat removed
1 onion, chopped
200 ml of Guinness
2 beef stock, shredded
2 tablespoons of Worcestershire sauce
3 sprigs of fresh thyme
6 carrots, cut into pieces
150 g savoy cabbage, chopped
2 green apples, cored and cut into matchsticks
3 spring onions, chopped
a bunch of fresh onions, chopped
1 level tbsp creamy hot horseradish
2 tablespoons oil-free vinaigrette
1 lemon juice
a small handful of fresh parsley, finely chopped
What are you doing:
1. Preheat the oven to 180°C/fan 160°C/gas 4. Spray a large non-stick frying pan with low calorie cooking spray and place over high heat. Brown the steaks in batches on both sides, then place in a deep baking dish to fit snugly.
2. Add the chopped onion and a cup of water to the pan and cook until the onion softens. Add 300ml water, Guinness, stock cubes, Worcestershire sauce and thyme. Bring to a boil, then pour this stock over the steaks and cover the dish tightly with a double layer of foil. Bake for 2 hours.
3. Remove the steaks from the oven and stir in the carrots. Cover again, return to the oven and cook for another 1-2 hours, or until everything is tender.
4. At the same time, prepare the salad. Put the cabbage, apple, onion and chives in a bowl. Whisk together the horseradish, vinaigrette and lemon juice and stir through the salt.
5. Discard the thyme sprigs from the cooked steak and scatter over the parsley. Divide the steak and slaw between 6 plates and serve with Slimming World chips.
